In The Garden: Paul James talks about "bolting" and what it means for our cool season vegetables

As the summer heat builds, our cool season crops start to fade away. One way we know this is occurring is when they start "bolting". 

Paul James, with Southwood Landscape and Garden Center, says that crops, such as lettuce, spinach, chives and garlic, go through this process and begin to flower.
