RECIPE: Saltimbocca chicken breast

TULSA - Chef Nicholas Andoe from Hard Rock Hotel & Casino Tulsa shares his recipe for Saltimbocca chicken breast.

Saltimbocca Chicken Breast


  • 4 oz Boneless chicken breast
  • 1 oz Prosciutto
  • 1 oz Roasted red pepper strips
  • ½ oz Fresh sage, whole
  • 1 oz White Shredded Cheese


Dust chicken in seasoned flour, then sauté until about 70% cooked. Place on sheet pan. Arrange in the following order: Chicken breast, prosciutto, red pepper, sage, and cheese.

Bake until cheese is melted and chicken has reached internal temp 165.
