RECIPE: Roasted pork and cranberry canapes

TULSA - Chef Nicholas Andoe from Hard Rock Hotel & Casino Tulsa shares his recipe for roasted pork and cranberry canapes.

Roasted Pork & Cranberry Canapes 

For the mayonnaise:

  • Egg Yolk  1
  • Mustard 2 tsp
  • Olive Oil
  • Sugar ¼ tbsp.
  • Lemon Juice 1 whole lemon

For the canapes:

  • Baguette 1/2, cut into 12 slices
  • Pork 12 slices, roasted to 155 degrees for 60 seconds then cooled to 41 degrees in 4 hours
  • Cranberry sauce (use jelly)
  • Bleu cheese  4 oz.
  • Fresh Thyme- 1 sprig for garnish 

Preparation:

For the mayonnaise, whisk together the egg yolk and the mustard. Stir in the oil a drop at a time until a yellow cream is formed. (If too much oil is added at once, the mayonnaise will curdle!) Season with a pinch of sugar and the lemon juice.

For the canapes, spread the mayonnaise onto the bread and top with the pork. Add a spoonful of cranberry sauce and add the cheese.

Serve garnished with fresh herbs and arrange on a plate. Makes 6- 8 portions
