RECIPE: Coffee BBQ Crusted Sirloin

TULSA - Chef Nicholas Andoe from Hard Rock Hotel & Casino Tulsa shares his recipe for coffee BBQ crusted sirloin.

Coffee BBQ Crusted Sirloin

Steak:

  • 1/ 8oz Sirloin steak
  • 2 tbsp olive oil
  • 1 & ½ pound brown sugar
  • ¼ cup kosher salt
  • 3 tbl Course Grind Black Pepper
  • 3 tbl cayenne Peppers
  • ¼ cup chili powder
  • 2 tbl paprika
  • 2 tbl ground ginger
  • ¼ cup onion powder
  • 3 tbl ground mustard
  • ¼ cup garlic powder
  • 1 cup course ground coffee

Green Beans:

  • 5 oz boiled green beans
  • 2 oz Cipollini onions
  • 2 tbl olive oil
  • Salt & Pepper

Cheddar Grits:

  • 5 oz instant grits (cooked)
  • ¼ cups sharp cheddar

Sauce:

  • 2 oz olive oil
  • 5 oz shiitake mushrooms (cleaned, rough chopped)
  • 10 oz red wine
  • 3tbl granulated sugar
  • 1 tsp honey

Directions:

Mix all dry ingredients together for rub on steak. Heat oil in pan until hot. Sear steak for 4 minutes on each side until crust is formed. In separate sauté pan, heat oil and onions until caramelized. Add boiled green beans and cook until slightly tender.

In sauce pan, add oil and sauté mushrooms until caramelized. Add red wine, sugar, and honey. Cook until reduced by half and be sure sauce can coat the back of a spoon.

Heat grits until hot and has a loose oatmeal texture. Add cheddar cheese and mix until all incorporated.
