Chef Remmi prepares power food recipes for summer introducing strawberry blueberry salad

It’s summertime and I am having a great summer! Summer is when I film most of my shows so I am cooking a lot to get ready. So…today I am going to bring to you some of my new recipes that will be filmed. These are recipes that will be served in Sodexo schools all across the country.  July was Blueberry Month, and August is Sandwich Month.  Picnic Month is in July and any or all of these recipes would work great at a picnic.  Each of these recipes have POWER FOOD ingredients like blueberries, strawberries and tomatoes so they are all powerfully good for you!

 

Remmi’s Summer Menu

Tomato Bruchetta
Strawberry Blueberry Salad
Strawberry Sandwiches

 

Tomato Bruchetta

Ingredients:

  • 12 slices crusty baguette, cut into heart-shapes
  • 6 cloves garlic, crushed
  • 6-7 tomatoes, seeded
  • 1/4 onion, diced small
  • 1/4 C olive oil
  • Salt and pepper, to taste
  • 1 bunch basil, shredded
  • 12 slices crusty baguette, cut into heart-shapes

Directions:

Set oven to broil. Broil heart-shaped baguette slices until browned and crispy. Rub each piece well with the raw garlic cloves. Arrange bread slices on a platter. Toss tomatoes with onion and salt and pepper to taste. Spoon tomatoes over each slice of bread just before serving. Drizzle with olive oil, sprinkle basil over all and serve. In this recipe, the fresher the tomatoes the better!

 

Strawberry Blueberry Salad

Ingredients:

  • Cucumber(medium/peeled/sliced thin in rounds)
  • 1 C Blueberries
  • 1 C Strawberries(sliced)
  • ¼ C onion(sliced thin)
  • Salt and pepper to taste
  • 2 T Salad oil(light)
  • 2 T Vinegar(red or white)
  • 2 T Fresh parsley

Directions:

Prepare ingredients as directed. Combine in medium bowl and serve. This is one of my easiest salads and the blueberries and cucumber are a winning combination!

 

Strawberry Sandwiches

Ingredients:

  • 2 slices of toast (whole wheat of whole grain)
  • 2 Tbsp cream cheese (low fat of fat-free)
  • 3/4 C sliced strawberries

Directions:

Toast bread. Spread cream cheese on one slice. Place sliced berries on cream cheese. Top with the remaining toast. You can also prepare this recipe with only one toast. This dish is simple and super yummy, which makes it an easty favorite for kids.

  • The chicken sandwich  was created as an alternative to the hamburger about 70 years ago and  dubbed the “Chick-fil-A.” Now there are over 1500 stores to this restaurant chain.
  • After the revolution of 1789, the French allowed their royal parks to open to the public for picnic events
  • Maine is the blueberry production capital of North America.
  • Blueberries contain antioxidants at high levels than other fruit and it is a preventative to cancer, heart disease, and Alzheimer’s.
