TULSA - Tulsa Food Guy's Grilled Chicken Thighs
The Tulsa Food Guy shares his method for cooking this traditional summer favorite.
- 8 chicken thighs
- Cajun seasoning (or favorite BBQ rub)
- Country Bob's All Purpose Sauce
Set up grill for direct grilling at a medium heat (around 300-350 degrees is ideal).
For charcoal, add some mesquite (hickory, apple or cherry can also be used) wood for smoke flavor.
For gas grills, add wood chips.
Pat the chicken down with paper towels to remove moisture from the surface of the meat. Season each side liberally with a Cajun or BBQ seasoning depending on your personal preferences.
When grill is ready, place thighs skin-side up diagonally across the grates for 2 and a half to 3 minutes. Flip the thighs over skin-side down diagonally across the grates and grill for another 2 and a half to 3 minutes, then turn each thigh 1/2 of a turn. This will give you nice diamond shaped grill marks on the top of the chicken.
Baste each thigh with Country Bob's All Purpose Sauce (or other preferred BBQ sauce) and grill another 2 and a half to 3 minutes. Flip each piece over and grill another 3 minutes or until done, basting each side (skin-side up now) with sauce.
To test doneness, meat should be firm to the touch. If you're unsure of the doneness, use a knife to cut a small slit in the meat until you reach bone. The juices should be clear. If they are red, your chicken is not done.
*This recipe can be done with chicken legs, breasts or wings as well. Cooking times may vary depending on size and cut of meat.
