Sunday Brunch: Chef Nona Helmick's Huevos Rancheros

TULSA - Chef Nona Helmick  shares her delicious version of this classic Mexican breakfast dish.

 

Ingredients:

  • 2 fried tortillas
  • 2 eggs, cooked to your preference
  • 1/4 cup beans (your choice)
  • 2 ounces shredded cheese
  • 1 ounce shredded lettuce
  • 1 ounce diced tomatoes
  • 2 ounces guacamole
  • 4 ounces salsa
  • 1 fried jalapeno

 

For Salsa:

  • 1 tomato
  • 1 jalapeno
  • 1 clove garlic
  • 1 yellow onion
  • 1/4 cup cilantro
  • 1 small call tomato juice
  • salt and pepper to taste

Place the tomato, jalapeno, garlic, onion and a small amount of water in a small saucepan.  Place on stove, boil for 3 minutes and strain.  Place in blender with tomato juice and cilantro.  Blend.  Add salt and pepper to taste.

 

For Guacamole:

  • 3 avocados, (remove seed and dice)
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • Juice of one lemon
  • Juice of one lime
  • Salt and pepper to taste

Place the diced avocado into mixing bowl, smash.  Add juices, tomatoes and onion.  Mix well.
