Fun Food Friday: John Spiegel with El Rancho Grande makes flan

John Spiegel with El Rancho Grande joins 2NEWS Midday for Fun Food Friday to whip up a little flan.
4 cups of milk warmed with a vanilla bean
1/2 cup sugar
1 tsp vanilla
1 vanilla bea
2 cups sugar for caramel
-- In a skillet over medium met the 2 cups of sugar.
-- As it starts to liquefy, start swirling the pan and watch closely to avoid burning.
-- When melted it will be a dark amber color.
-- Put two tablespoons of caramel into 4-inch ramikens.
-- Swirl to cover bottom and set aside.
-- Add the 6 eggs and 1/2 cup of sugar. Mix well.
-- Remove the vanilla bean from the warmed milk and add to the egg and sugar mixture.
-- Add vanilla to the mixture and mix well to incorporate.
-- Divide mixture between 6 ramikens.
-- Place in 13x9 pan and add boiling water to the pan filling it up halfway.
-- Bake in a 350-degree oven for 35 minutes or until a knife in the center comes out clean.
-- Cool for 30 minutes and then refrigerate.
-- To serve, run knife around ramiken and place plate on top of ramiken. Invert.
-- Garnish with fresh fruit.
