Hibiscus Caribbean Bar and Grill makes Jamaican Pineapple Chicken for Fun Food Friday.
4 oz of boneless chicken breast
1/2 cup of diced pineapple
1/2 cup of pineapple juice
2oz of shredded carrots
1 oz of chopped green onions
1 oz of chopped bell peppers
1 oz of diced tomatoes
1 oz chopped onions
2 tea spoon of citrusgrill seasoning
1 teaspoon of dry jerk seasoning
1 teaspoon of granulated garlic
1 teaspoon of thyme leaves
1 teaspoon of red crush pepper flakes
2 oz of hibiscus sauce
Preparation: (Serves 2)
Season and grill chicken breast until half cooked, cut into strips or dice.
Combine onion, tomato, bell pepper, green onions, diced pineapple, pineapple juice, and hibiscus sauce in a skillet and put over medium to high heat.
Stir together and add the diced chicken breast, stir and mix and turn ingredients in skillet often making sure to not let the mixture dry out ( if it does add more pineapple juice), add in the dry jerk seasoning, thyme, citrus grill, granulated garlic, and crush red pepper, and mix all together,
Turn the flame down to low and let mixture simmer for 2 minutes, then turn off, serve with rice, pasta, vegetables or even over a salad.
