Sunday Brunch: Chicken Marsala in Bites part II

Chicken Marsala in Bites by Eric Himan

3 chicken breasts (diced into 1-inch pieces)

1/3 cup all -purpose flour

1/2 tablespoon of salt

teaspoon of black pepper

1/2 tablespoon of garlic powder

1/2 cup of Marsala wine

1/4 cup olive oil

1 red onion cut lengthwise

8 whole mushrooms chopped

3 pieces of fresh basil chopped

Start by mixing the flour, salt, pepper, and garlic powder into a small shallow dish. Drag the chicken pieces through and place on plate. Cut up the mushrooms and red onion.

In a large pan, add the olive oil to warm pan on medium and then add the chicken. Brown on both sides to cook evenly and add the right amount of browning to the pan.

When done, take chicken out and place on plate and cover.

Add the red onion and mushrooms to the pan and cook for about 3 minutes. As it starts to cook down add the marsala wine (off the heat because it is alcohol and you don’t want flames) and scrape up as much of the browning as possible on the bottom of the pan. Bring to a simmer and stir the sauce into the mushrooms and red onions.

When thickened, add the chicken to the pan to stir and plate. Once plated, sprinkle the basil on top and serve.
