TULSA - This recipe is a great way to put a new spin on chicken.  It is quick and easy to make and a great option for a low fat diet. You won't even ask "where's the beef" you will love these so much.

Number of Servings: 4

 

Ingredients :

Tzatziki Sauce:

  • 1 1/4 cup Chobani 0% Plain Greek Yogurt
  • 1 medium cucumber, peeled and finely chopped
  • Juice of 1 Lemon
  • 2 cloves minced garlic
  • 1 teaspoon dried mint
  • 2 tablespoons fresh parsley
  • 2 tablespoons red onion, raw
  • 1 dash salt
  • 1/4 teaspoon white pepper


Burger Mixture:

  • 1 pound extra lean chicken breast
  • 3 ounces fat free Feta cheese
  • 4 pitted green olives
  • 2 cloves minced garlic
  • 2 tablespoons fresh parsley
  • 2 tablespoons chopped red onion, raw
  • 1 teaspoon dried mint
  • 1 teaspoon dried oregano
  • 1/4 cup liquid egg substitute
  • 4 tablespoons parsley
  • 1 dash salt
  • 1/4 teaspoon white pepper
  • Pam Cooking Spray

 

Tips:

Nicely serve with pita pocket bread and some lettuce and sliced tomato.

 

Directions:

Combine all ingredients for cucumber sauce and refrigerate until ready to serve.

In a mixing bowl combine all ingredients in burger mixture and shape into 4 patties.  Spray grill pan with cooking spray and cook 5 to 7 minutes per side.

Serve hot with Tzatziki Sauce on Top.

Serving Size: 1 burger with 2 tablespoons sauce
