TULSA - Julie Wheeler shows us how to make these Amish treats.  It is simple and easy, with much less fat and calories than the traditional whoopie pie.

Minutes to Cook: 12

Number of Servings: 12

 

Ingredients:

Whoopie pie Ingredients:

  • 1 Box Betty Crocker Super Moist Spice cake mix
  • 1 15 ounce can pumpkin, without salt
  • 1/2 cup egg substitute, liquid (Egg Beaters)
  • 1/2 teaspoon apple pie spice


Filling:

  • 3 cups Healthy Choice Greek Vanilla Frozen Yogurt

 

Tips:

You can use any vanilla frozen yogurt but the Greek yogurt gives additional protein to the dish and boosts the nutritional value.

 

Directions:

Combine all ingredients for whoopie pie and mix well.  Spoon 24 medium scoops of filling on a greased cookie sheet.  Bake at 350 degrees for 10-12 minutes until firm.  Let cool on a baking rack.  Spoon 1/4 cup frozen vanilla Greek yogurt between the cookies and serve.

Serving Size: 1 whoopie pie (two cookies plus 1/4 vanilla frozen yogurt)
