Chocolate Earl Grey Cupcakes
3 cups + 2 tablespoons all purpose flour
3 cups sugar
1 1/2 unsweetened cocoa
3 teaspoons Baking soda
1 teaspoon kosher salt
3 tablespoons loose earl grey tea
Zest of 1 orange
2 tablespoons vanilla
1 cup + 2 tablespoons canola oil
3 teaspoons white vinegar
2 cups cold water
1 cup boiling water
Sift all dry ingredients together, set aside.
Steep the loose tea in the hot water until it cools down. Strain tea water and add to cold water. Whisk all the wet ingredients together.
Mix the wet ingredients into the dry into. Mix only to combine.
Pour batter into 36 cupcake tins and bake at 350 degrees for about 15-20 minutes or until toothpick comes out clean.
Fill with orange curd and frost with orange buttercream
