TULSA - INGREDIENTS
- Eggs - 8 each
- Extra Virgin Olive Oil - 1 tablespoon
- Black Beans 1-12 oz. can
- Bell Pepper - 1
- Onion, yellow, diced - 1/2 each
- Jalapeno, minced - 1/2 each
- Lime, juiced - 1 each
- Cilantro, chopped - 3 springs
- Tabasco - dash
- Cumin - 1/8th teaspoon
- Salt & Pepper - to taste
- Tortilla, spinach - 4 each
- Soy cheese - 1/2 cup
- Avocado - 1 each
DIRECTIONS
- Heat olive oil in a medium pot.
- Add the peppers & onions. Lightly season with salt and pepper.
- Reduce to a medium temp, cover and let cook for three minutes
- Remove lid, add lime juice, cumin, tabasco and salt and pepper.
- Saute for an additional three minutes
- Add the black beans.
- Simmer on low for 15 minutes.
- Add chopped cilantro, reserve.
- Heat the cast iron skillet to medium.
- Add enough oil to coat the pan lightly and toast the tortillas with some cheese
- Cook the eggs to your liking in a lightly oil egg pan.
- Peel and dice the avocado.
- Present the tortilla on a plate.
- Top with black beans, eggs and avocado.
