TULSA -
 
Start with a 3-5 oz. catfish filet
Coat with butter, both sides (oil if you like)
Then apply a decent amount of blackening seasoning on both sides.
Place the fish in medium high heat in a non-stick pan (it's going to smoke a little bit)
Cook for 3-5 minutes per side or until done.
