YOKOZUNA’S COBRA KAI


2 oz Chinese sausage
4 oz chunk marinated chicken breast
1 oz canola oil
1 oz chiffonade of leeks
1 oz sliced shitake mushrooms
1 TBS minced garlic
1 TBS minced shallot
1 oz chicken stock
7 oz cooked soba noodles
1 tsp salt
1 TBS green onion, chopped

Place medium sauté pan on medium/high heat and add Chinese sausage, rendering fat our & cooking for ~30 seconds. Place chicken chunks in pan and sear on all sides. Add leeks and mushrooms and sauté for 30 seconds, adding garlic & shallots & cook until aromatic. Deglaze the pan with 1 oz chicken stock and scrape pan to release essence. Heat pre-cooked pasta in hot water for 10 seconds, toss pasta with meat & veggie mixture, add salt. Serve & enjoy!
