Syrian Salad

Ingredients:

1 head chilled iceberg lettuce (washed and dry)
12 tomato wedges
2 tsp. salt
4 medium garlic cloves (to taste)
4 Tbsp. fresh lemon juice
4 Tbsp. salad oil
2 Tbsp. fresh spearmint (finely chopped)

In the bottom of a salad bowl crush the fresh garlic cloves into the salt (to make a paste). Then squeeze in fresh lemon juice and add salad oil. Stir. Sprinkle mint into the dressing and add tomatoes; marinate briefly. Add chilled iceberg lettuce, toss and serve with marinated tomato wedges on top.
