Spinach au Gratin

1 1/2 lbs. bacon
1 lb. diced red onion
1 lb. sliced button mushrooms
3 lbs. chopped frozen spinach
1 qt. heavy whipping cream
8 oz. shredded cheddar cheese

Chop bacon into small 1/2 in pieces and place in large deep skillet cooking on medium heat. While bacon is cooking thaw spinach and sqeeze out as much water as possible.
This is also a good time to slice and dice mushrooms and onions. When bacon is fully cooked remove from skillet and set aside leaving the grease in the skillet.
Place mushrooms and onions in the bacon grease (carefully) and cook until tender. Once complete reduce heat to low and add squeezed spinach and whipping cream.
Stir until the spinach is spread evenly throughout the pot and then let simmer for about 5 minutes. Add bacon bits, stir and salt to taste.
Finally if you choose, place spinach in a suflee dish and spread cheese over the top and place under a broil until cheese is golden brown.
Serve Immediatly. Serves 6-8
