Spanky's Italian Cream Cake

Italian Cream Cake

1 stick of margarine
1/2 c. vegetable oil
2 c. sugar
5 egg yolks
1 sm. package of coconut
5 egg whites stiffly beaten
2 c. flour
1 tsp. baking soda
1 c. buttermilk
1 tsp. vanilla
1 c. chopped walnuts

Cream margarine and oil. Add sugar & beat until smooth. Add egg yolks and beat well. Combine flour and baking soda. Add to creamed mixture alternating with buttermilk. Stir in vanilla then add coconut and nuts. Fold in egg whites. Pour mixture into 3 9 in. greased and floured pans. Bake at 350 in the oven for 25 minutes. Cool and frost with cream cheese frosting.

Cream Cheese Frosting

1 8 oz. cream cheese ( softened)
1/2 stick of margarine (softened)
1 sm. box of powdered sugar
1 tsp. vanilla
1 c. chopped nuts

Mix together and frost
