Smoked Salmon Cheesecake

Ingredients:

3/4 lb. smoked salmon, chopped
1 large onion, finely chopped
1 tbsp. fresh dill
2 tbsp. butter
1 1/2 lbs. cream cheese, softened
8 eggs
1/2 cup Half & Half
1/2 cup Gruyere cheese, grated
1 (8 inch) springform pan, buttered and floured

Garnishes: sour cream, capers, pearl onions, extra dill, your favorite pickles and olives and/or pickled corn.

Directions:
Preheat oven to 300 degrees.
Soften cream cheese slightly and then combine with eggs and salmon in a food processor and mix well. Sauté onion and dill in butter. Then add onion mixture along with half and half and the gruyere cheese. Blend until smooth. Pour entire mixture into prepared springform pan and bake for 45 to 60 minutes or until firm and nicely browned on top. Let cool, but chill this in your refrigerator. It will help to firm up the cheesecake. Serve each slice with a dollop of sour cream, capers, etc. and your favorite crackers.
