Rosemary & Sage Roasted Yukon Golk Potatoes

2 1/2 lbs. Yukon Gold potatoes
1/4 c. olive oil
1 Tsp. fresh snipped sage
2 cloves garlic, minced
Paparika to taste
Salt & Pepper to taste

Wash and dry potatoes.  Combine remaining ingredients in a mixing bowl.
Add potatoes to bowl and coat with seasoning mixture.
Roast in a 400 degree oven 35-40 minutes.

If serving with Honey & Sage Roasted Rack of Pork, place coated potatoes in roasting pan with rack of pork.
