Potato Pancakes

German Potato Pancakes

3 lbs. potatoes
1 onion
3 eggs
4 Tbsp. flour
1 tsp. salt
Oil or Shortening

Peel and grate potatoes and onions. Mix with flour, eggs and salt. Heat oil in frying pan, spread dough thinly and fry golden brown on both sides. Serve with apple sauce.
