Jamaican Jerk Shrimp

Hibiscus Restaurant - Jamaican Jerk Shrimp

Serving size: Approx. 2

Ingredients:
½ 1b. or 15 Jumbo raw deveined shrimp
¼ Red pepper (sliced)
¼ Yellow pepper (sliced)
¼ Green Pepper (sliced)
1tsp dried thyme leaves
4 cloves of garlic (minced)
1 tsp of Old Bay seafood seasoning
2 tsp of dry jerk seasoning
1 medium ripe tomato (diced)
5 stalks green onion (chopped small)
*or substitute ½ yellow onion
½ cup water
1tsp vegetable oil
Pinch crush red pepper
Pinch of Salt

1.place raw shrimp in mixing bowl
2.Add thyme, old bay, jerk seasoning in mixing bowl
3.Add ½ of ½ cup water to mixture
4.mix ingredient in bowl by hand
5.let stand in fridge covered 5 minutes
6.pre-heat oil in large skillet on medium fire for 1 min,
7.add onions, tomatoes, garlic, peppers (Stir w/wooded spoon)
8.Sauté seasoned shrimp and ingredients for 30 seconds
9.Add remaining continue to sauté until water is reduced 50%
10.Remove from heat and serve with rice or over salad or chill and serve as Jerk shrimp cocktail.
