Honey & Sage Roasted Rack of Pork

1 8-rib pork loin racks, center cut, chine bone off
Salt & Pepper to taste
1/2 c. honey
2 Tbsp. fresh snipped sage

Season pork racks with salt and pepper.
Place each rack in roasting pans with bones facing up and sides not touching.
Roast at 350 degrees for 1 hour or until internal temperature reaches 150 degrees.  (About 20 minutes per pound)
Remove from oven.

Stir honey and sage together and brush mixture onto roast.
Before slicing, let rest 10 minutes while internal temperature rises to 160 degrees. 

For serving, position the 2 roasts with bones up and interlaced.
