2 oz fresh spinach
3 oz fresh mozzarella
¼ avocado, sliced
4 slices red onion rings
1 oz sun-dried tomato aioli
2 slices Tuscan bread
Spread one side of slice of bread with 1 oz of sundried tomato ailoi. Build as follows: avocado slices, onion rings, fresh mozzarella and spinach. Spread the remaining aioli on the other slice and top the sandwich.

3 oz fresh mozzarella
3 slices roma tomato
1 oz pesto
2 oz spring mix
½ oz balsamic reduction
1 foccacia roll, sliced
On bottom of foccacia roll, spread pesto. Layer as follows: fresh mozzarella, tomato slices, spring mix. Spread balsamic reduction on top of roll.
Sun-Dried Tomato Aioli
¼ cup sun-dried tomatoes, well-drained
1 garlic clove
pinch cayenne pepper
½ cup mayonnaise
Pulse sun-dried tomatoes with garlic & cayenne pepper in a food processor until smooth. Add mayonnaise and pulse until well-blended. Refrigerate in an airtight container.
Balsamic Reduction
1 ½ cups balsamic vinegar
¼ - ½ cup of brown sugar (depending on your taste)
Bring vinegar to a boil,turn down heat & let simmer. When it reduces by ½, add brown sugar. Simmer until it becomes syrupy & sticks to the back of a wooden spoon. As it cools, t will continue to thicken. Store in an airtight container in the refrigerator when not in use.
