Guacamole from "On The Border"

Guacamole by "On The Border"
Fun Food Friday, June 27th, 2008

Ingredients:

2 Fresh avocados
1 Lime Wedge (1/6 of a lime)
1/2 Teaspoon Salt
2 Tablespoons Diced Tomatoes
1 1/2 Tablespoons Finely Chopped Jalapeno
1 Tablespoon Finely Chopped Red Onion
1 Teaspoon chopped Cilantro

1. Slice 2 avocados in half and scoop the avocado meat out with a soup spoon, Being careful to remove all of the meat.

2. Squeeze the lime slice over the avocado meat and add 1/2 tsp. salt.

3. Using the back of the soup spoon to hold the avocado meat and break up the avocado meat with a fork.

4. Add diced tomatoes, jalapenos, red onions and cilantro. Using fork and soup spoon fold the ingredients into avocado meat.

5. Serve with a fresh bowl of hot tostado chips.
