Grilled Prime Burger with Hot Pepper and Smoked Gouda

Chef Landry's Grilled Prime Burger with Hot Pepper and Smoked Gouda

1.5 lbs. Certified Angus Beef Prime Natural 85% lean ground beef
1 poblano pepper, seeded (use scotch bonnet pepper for more heat)
4 sun-dried tomatoes (oil packed), drained and pureed
5 Tbsp. mayonnaise
8 thin slices smoked Gouda
Petit greens
4 onion hamburger buns
Salt & pepper to taste

Mix mayonnaise and sun-dried tomatoes together, set aside to allow flavors to combine.
Shape ground beef into 4 patties.  Season with salt and pepper.
Grill patties over medium-high heat to an internal temperature of 160 degrees.
Grill pepper until tender, slice into thin strips.
Create burgers by stacking pepper, Gouda, petit greens and mayonnaise on an onion bun with burger patty.
