BREAKFAST 2 GO:
Sunrise Smoothie 2 Go

16 oz. orange juice
10-12 strawberries, frozen
2 frozen bananas
1 container vanilla yogurt, low-fat
2 tbsp honey
2 scoops whey protein powder


Add OJ, protein powder, yogurt and honey to blender. Mix well. Add frozen bananas, blend until smooth. Serves 4. Enjoy!


BREAKFAST 2 GO #2:
Super Scramble

Egg whites
MorningStar Sausage
Spinach
Green Onions, chopped
Soy cheese, shredded
Salt & Pepper to taste


Place egg whites in a bowl. Beat until foamy.
Spray frying pan with Pam. Toss in 2 chopped green onions. Stir fry 1-2 minutes. Add spinach. Stir fry until wilted. Add sausage. Fry until warm. Add eggs – stirring until cooked. Sprinkle with salt & pepper if desired. Top with shredded soy cheese for a beautiful scramble that is full of super food.


Serve with fresh fruit & slivered almonds on the side.

Green leafy lettuce
baby spinach leaves
whole walnuts, toasted
craisins
feta cheese

Light Done Right Raspberry Vinaigrette


Black Beans 2 Go

2 tablespoons vegetable oil
2 (15.5-ounce) cans black beans, drained
3/4 cup water
2 cups chunky salsa, drained and juices reserved
2 small chipotle chile, minced (from 1 can of chipotles en adobo)
2 teaspoons adobo sauce
3 cloves garlic, minced
Table salt and ground black pepper
2 cups cooked white or brown rice* brown is healthier!
Fresh cilantro
2 Tbsp. Healthy Choice butter
1 cup reduced fat shredded cheddar cheese
4 (10-inch) whole wheat tortillas


Heat oil in large nonstick skillet over medium-high heat until just beginning to smoke. Add black beans, water, reserved salsa juices, chile, and adobo sauce and cook until liquid has evaporated and beans are soft, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Using potato masher, mash beans lightly. Season with salt and pepper.
Steam rice. Add butter and fresh cilantro. Spread ½ cup of black bean mixture down center of each tortilla. Add ¼ cup rice and 1/8 cup cheese. Add salsa if desired. Roll up tortilla. Microwave for approx. 30 seconds if desired. Serves 8.


*You will find chipotle chiles en adobo sauce in the Mexican food section of most supermarkets.

Dessert 2 Go

1 square Ghirardelli dark chocolate*
1 cup strawberries, blueberries or fresh fruit of choice
*Melt dark chocolate in small dish. Dip fruit into melted chocolate. Yum!
