El Guapo's Machacka Burrito

EL GUAPO’S MACHACKA BURRITO

2 TBS canola oil or butter
1 lb flank steak, seasoned, grilled & sliced
1 medium yellow onion, chopped
1 green bell pepper, seeded & chopped
1 red bell pepper, seasoned & chopped
8 large eggs
4- 10” flour tortillas
1 cup white queso
1 cup shredded monterey jack/cheddar cheese
1/2 cup guacamole
4 TBS sour cream

*Heat canola oil in a large sauté pan over medium heat. Take beef slices & roughly chop. Add to the pan and heat through. Add onion and bell peppers and cook until onion is translucent. Scramble eggs in a bowl & add to meat mixture. Stir constantly to incorporate and prevent sticking & overcooking. Season with salt & pepper to taste.
*Warm the tortillas on a flat top or in a microwave, briefly. Divide meat mixture into tortillas and roll up. Pour white queso on top, sprinkle with shredded cheese & place under broiler briefly to melt cheese.
*Serve with guacamole, sour cream, fried potatoes, and beans.
