El Guapo's Huevos rancheros4+ TBS canola oil3 medium corn tortillas
8 oz salsa roja
4 oz refried beans
5 oz Monterey jack cheese, shredded
1 oz Mexican crema
¼ avocado, sliced
1 oz onion, chopped
1 oz cilantro, chopped
2 large fresh eggs
Preheat oven to 350 degrees.
Heat 1 TBS canola oil in a small pan and add onions, cooking until translucent. Add refried beans and heat through. Keep on low heat.
Heat 2-3 TBS canola oil in a medium sauté pan. Quickly pan fry corn tortillas (both sides) and set aside. In same pan, fry eggs, adding more oil, if needed.
On a heat-proof dish, place one tortilla, 1/3 each: bean mixture, salsa roja, Monterey jack cheese. Repeat w/remaining tortillas. Top with eggs, Monterey jack cheese and Mexican crema. Place in oven briefly to melt cheese. Garnish with avocado and cilantro and serve immediately.
