El Guapo's Chile Verde

EL GUAPO’S CHILE VERDE

13 each whole garlic cloves
2 bunches cilantro, stems removed
3 each poblano chile (seeded)
8 each jalapenos (sliced)
2 qts chicken stock
1 ½ lbs tomatillos
*Puree in a food processor or blender & reserve

6 lbs pork roast (diced)
1 cup canola oil
3 each yellow onion (diced)
¼ cup Mexican oregano
¼ cup cumin
1 TBS cinnamon
½ cup flour
*In a large roasting pan, saute pork in oil on medium high heat until browned. Add spices & onions and cook until onions are translucent. Add puree from blender and simmer until pork is tender ~ 1- ½ hours, stirring occasionally. Sift flour in toward the end to thicken, stirring constantly to avoid lumps. Serve topped w/ shredded cheese, cilantro, pico de gallo & tortilla strips.
