Corned Beef Hash

DILLY DELI’S CORNED BEEF HASH

1 lb corned beef, roughly chopped
1 small yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 lb Yukon gold potatoes, diced, cooked & cooled
¼ cup heavy cream
2 TBS parsley, chopped
1 cup breadcrumbs
1 oz unsalted butter
canola oil


In a large skillet, saute onion, red and green bell peppers, and potatoes in butter. When onions and potatoes are golden, remove from heat and cool. Transfer to a large mixing bowl and add corned beef and bread crumbs. Slowly add heavy cream to bind mixture. You may not need to use it all. Remove in ~6 oz portions and place in skillet, flattening with spatula. Cook until browned on one side, then flip to cook other side.
