Chocolate Bon Bons

MC’NELLIE’S CHOCOLATE BON BONS


1 cup Guiness
½ lb unsalted butter
2 cups all-purpose flour
2 cups granulated sugar
¾ cup cocoa powder
1 tsp baking soda
2 whole eggs
¾ cup sour cream

Slowly melt butter in beer in a medium saucepan. Let cool after melting.
Sift dry ingredients in a large mixing bowl. Add cooled beer/butter mixture, then eggs and sour cream. Mix on low speed for 3 minutes.
Pour ingredients in a 9 inch round pan and bake at 375 degrees for 1 hour. Cool on rack after baking.
Once cake has cooled, break up into a medium mixing bowl and add ½ cup Irish cream. Mix well. Using any size scoop, scoop out dough and place on wire rack.

Ganache:
½ cup heavy cream
1 lb semi sweet chocolate chips

Heat cream and chocolate chips until completely melted.

Pour ganache over dough.
