Candlewyck Inn's Herbed Potatoes and Sausage

Ingredients:

1 medium onion
2 green onions
1 large tomato
1 3/4 lbs. red potatoes (equals 6 medium-sized potatoes)
Salt to taste
2 tbsp. vegetable oil
1 tbsp. minced basil leaves
1/4 tsp. dried oregano
1/8 tsp. dried thyme freshly ground pepper to taste
3/4 lb. mild Italian sausage
4 oz. grated Cheddar cheese
4 oz. sour cream
Paprika

1) Peel and dice one medium onion into 1/4 inch pieces. Slice the green onions crosswise into thin slices. Core, seed and dice the tomato. Cut the red potatoes into 3/4 inch chunks.
2) Put the red potatoes into a large saucepan, add enough cold water to cover potatoes, put in 1 tsp. salt. Bring to a boil and then simmer until tender, drain off the water.
3) Heat cooking oil in a large skillet. Add red potatoes and saute until lightly browned. Add onions, tomato, herbs, 1/2 tsp. salt, and 1/4 tsp. fresh ground black pepper. Saute until onions are tender, then remove the mixture from the skillet.
4) Place sausage into a skillet and brown, drain off and discard fat. Combine sausage and potato mixture, then transfer to a 3 qt. Casserole.
5) You may let it cool, then cover and refrigerate overnight. When you are ready to serve put into the oven at 350 degrees for 20 to 25 minutes.
6) Sprinkle grated cheese over the top, return to the oven just long enough to melt cheese topping. Before you serve, top each portion with a dollop of sour cream and sprinkle with paprika.
