Canadian Atlantic Salmon with Lemon Basil Butter

Canadian Atlantic Salmon with Lemon Basil Butter

1.5-2lb. Canadian Atlantic salmon fillet cut into four 6-10 oz. portions
8 oz. softened, unsalted butter
5-8 fresh basil leaves
Juice from 1/2 large lemon
Lemon zest from 1/4 lemon
1 tsp. sea salt
olive oil

Lemon Butter:
        Combine butter, basil, lemon juice, zest and sea salt in food processor.  Form the combined butter into a stick or cylinder and wrap with parchment paper.  Place butter in freezer.
        
Salmon:
        Heat grill to approx. 350 degrees. 
        Oil the grill and both sides of salmon portions to ensure they do not stick.
        Cook approx. 2 1/2-3 minutes per side for medium rare. 
        Use solid, metal spatula to quickly slide under salmon for easier turning.

Immediately after removing salmon from the grill, sprinkle lightly with additional sea salt.  
While salmon is still hot, place thin slices of Lemon Basil Butter on top of each portion and allow to melt in.

Serving suggestion:  rice and fresh green beans
