Bronko Carr's Cowboy Beans & Fix'ns

Bronko's "Cowboy Beans & Fix'ns"

1lb Pinto Beans
1 large yellow onion, diced
3 tbs Olive oil
1/2 stick butter
2 garlic cloves, minced
2 tbs bacon fat
4 tbs Louisiana hot sauce
1/2 c. sugar
1 c. chicken stock
1 can Italian dice tomatoes
1 c. Bronko's Smoke house BBQ-Pit Sauce
1/2 c. rice
1 lb smoke sausage, sliced
1 c. shredded cheese
1 sliced red onion

Inspect your beans for any unusual pieces.  Wash and let soak in cool water for about an half an hour.
Over medium heat, add olive oil, butter and bacon fat to 2-4 quart pot and let melt together.
Add diced onions, garlic and a pinch of salt & pepper.  Raise heat to med-hi and let caramelize.
Add sugar, hot sauce, Bronko's Smoke House Pit Bar-B-Que Sauce & chicken stock.
Drain beans.  Add to pot and let simmer 5 to 10 min.
Fill pot 2/3rd of the way up with water.  Bring to a boil, then turn heat down to a medium boil for about 2 1/2 hours until beans are tender.
Add rice.
Saute sausage in olive oil and combine with tomatoes.  Add both to the beans and rice.
Let stand for about ten minutes and serve with cornbread.
Garnish with shredded cheese and slice red onions.
