Betty's Shishkabobs

Ingredients:

1 pound pork loin
3/4 cup wine-dry white
1 tsp. finely chopped fresh cilantro
1 tsp. lemon pepper
1 clove garlic minced finely

1) Cut the pork loin into about 1 1/2 inch squares, cutting off any excess fat.
2) Combine wine, garlic, and cilantro in a zip type bag. Rub the pork with lemon pepper. Place meat chunks into bag, close tightly and roll around to cover completely. Place in refrigerator for a few hours or over night, turning several times to coat evenly.
3) In baking dish, place foil, enough to fold back over and make a small package. Place cubes of pork in foil, fold over and fold ends up. Pour marinate out, never use after marinating pork or chicken. Bake for about 30-40 minutes until tender. Cool leaving in the package. Place in the freezer for future use.
4) My suggestions for vegetables are green, red, or yellow peppers, yellow squash, onion, use in season vegetables, or ones you like best. 
5) Cut vegetables about 1 1/2 - 2 inch squares, starting with vegetable, alternate vegetables and meat on spears. Roast over medium hot fire until crisp and tender and meat is hot.
